
Vegetables:
5-6 Potatoes (Gold)
3 Large Onions
3 cloves of Garlic
2 inch piece of Ginger
3 lbs Roma Tomatoes
20-25 Green Beans (fresh)
1 cup Frozen Peas
3 Carrots or 2 cups Baby Carrots
1/4 of a large Cauliflower.
3 lemons
1 bunch Cilantro.
Other Ingredients:
1/2 cup Butter
Everest Pav Bhaji Masala ( you would get this at the Indian Grocery Store.)
Salt
1 can Tomato sauce
1 Bag Dinner Rolls from Costco.
Method:
1)You would have to steam the potatoes. I do that in a pressure cooker. The easiest thing you can do is Put your washed unpeeled Potatoes in a plastic Bag n stick it in the Microwave. And use the Baked Potato setting. Make sure you don't wipe the potatoes.. let there be some water for it to get steamed. Tie a knot on the plastic bag and then make a small hole in the bag for the excess steam to vent out. Sounds complicated but trust me... its simple. When you get the potatoes out... make sure they are completely cooked so if you pierce them with a knife, it shld go in and come out fairly easily. If not, cook further. When cooked you can peel with your hands and mash them and keep aside.
2) Take Butter in a Big Heavy Sauce Pan. Let it melt but don't let it overheat. Add crushed garlic. When it begins to sizzle add finely chopped onions. Cook them until they turn transparent, but don't brown them.
3) So while the onions are getting cooked which would take a good 30-40 mins start chopping the tomatoes, dont crush them. Chop into small cubes. After the Onions turn transparent add the tomatoes. Add abt 3 tsp of Salt and 3 tsp of Pav Bhaji masala. Peel the ginger and crush it very fine or use a fine grater to grate it and add this to the Onions. Stir well n let it cook covered for abt 45 mins. The tomatoes take a while to cook. Keep stirring it every 5 mins to make sure it does not stick to the bottom of the pan. Covering the pan speeds up the cooking process and keeps the water content high.
4) Take Cauliflower and cut into small florets, peas, finely chopped green beans and carrots.You can chop your green beans and carrots in a food processor. Steam cook all these vegetables with 2 cups water , until they are well over cooked, they shld get mushy and not have a bite to it. While cooking these vegies add another tsp of pav Bhaji masala and salt.After it gets cooked, mash it well.
5) By now your Onion Tomato mixture might have gotten cooked. Add the Peeled Boiled and mashed Potatoes. mix well. Now add the mashed vegies. If its too thick add water until you get the desired consistency.. this is like what you ate at Melissa's.
6) Add a can of Tomato sauce. And let it cook for abt 10-15 mins on slow flame until everythings all blended. Now taste it.... if its low on either salt or Pav Bhaji masala keep adding a tsp stir well and taste again. Don't add tooo much coz it might get tooo spicy. So make sure you stir well after every tsp n taste.
7)Add the juice of 3 lemons.
8) Add chopped cilantro (if you like it) . with a little blob of butter after you serve it on a plate.

*Get dinner rolls and cut into half, butter them and toast them on a pan rite before serving
